Sour Cream Coffee Cake
| Ingredients
2 cups sugar 1 cup butter 2 eggs 2 cups flour 1 cup sour cream 1 tsp. vanilla 1 tsp. baking powder ½ tsp. salt For the topping: 1cup chopped nuts 1 tsp. sugar 1 tsp. cinnamon |
Cream sugar and butter, add eggs, vanilla
and sour cream. Add all dry ingredients and stir by hand. Pour half the batter into greased and floured 8-inch cake pan. Sprinkle half the topping over batter. Add remaining batter, and sprinkle with remaining topping. Bake at 350º for about an hour. This cake freezes well. |
Lady Finger Cream Cheese Cake
| Ingredients
2 pkgs. lady fingers 1 8-oz. pkg. cream cheese 1 3-oz. pkg. cream cheese ½ cup sugar 1 pint heavy cream 1 tsp. vanilla |
Line the bottom and sides of a spring
form pan with split lady fingers. Soften cream cheese; add sugar. Beat cream and combine with cheese. Add vanilla and beat until smooth. Pour ½ the cheese mixture over the lady fingers. Add another layer of lady fingers and pour remaining cheese mixture over top. Cover and refrigerate overnight. May add topping of choice before serving. Also makes an attractive presentation when a ribbon matching the color of the topping is tied around the outside of the cake before serving. |
Applesauce Cake
| Ingredients
2 cups sifted cake flour 1 tsp.baking soda 1 tsp. cinnamon ¼ tsp. ground cloves ½ tsp. salt ½ cup shortening 1 cup sugar 1 egg 1 cup dates 1 cup hot, strained applesauce |
Sift dry ingredients together.
Cream the shortening and sugar. Add beaten egg and sliced dates. Stir in applesauce and dry ingredients alternately. Bake in 8 or 9-inch pan at 350º for 40 minutes. |
Tomato Soup Cake
| Ingredients
1 cup sugar 2 Tbs. butter 1 egg 1 can tomato soup ½ tsp. baking soda 1½ cups flour 1½ tsps. baking powder ½ tsp. cinnamon ½ tsp. allspice ½ tsp. nutmeg 1 cup raisins ½ cup chopped nuts |
Mix together sugar, butter and egg.
Add tomato soup, dry ingredients, raisins and nuts. Mix well. Bake at 375º in loaf pan for 1 hour. |
Pinwheel Apple Cake
| Ingredients
4 large apples,pared & cored ½ cup sugar 1 Tbs. flour 2 Tbs. cinnamon 1½ cups flour 1½ tsp. baking powder 6 Tbs. butter 3 eggs, well-beaten ½ cup milk 3/4 tsp. vanilla 1 cup sugar |
Cut apples into crosswise rings,
about ¼ inch thick. Roll rings in ½ cup sugar, 1 Tbs. flour, and cinnamon, all combined. Heat oven to 375º In large bowl, sift flour, 1 cup sugar, baking powder. Cut in butter. Mix eggs, milk, and vanilla. Add to flour gradually. Pour into round or square ovenware dish. Arrange apples in overlapping rows on top. Bake 40 minutes, or until done. Serve with ice cream. |
