| Ingredients
½ cup butter 1 cup sugar 2 eggs 1 tsp. vanilla 1 tsp. baking powder 1½ cups flour ¼ tsp. baking soda ½ tsp. salt |
Cream butter and sugar thoroughly.
Add eggs, vanilla, and baking powder.

Poke a hole in each with your finger. Fill with jam or jelly. Bake at 350º until firm, about 20 minutes. Makes about 40 cookies. |
Golden Thumbprints
| Ingredients
1/3 cup brown sugar ½ cup butter 1 egg, separated ½ tsp. vanilla 1 cup flour ¼ tsp. salt 3/4 cup chopped walnuts

Cream together sugar, butter, egg yolk and vanilla. Stir in
flour and salt.
Roll into 1-inch balls. Dip into slightly beaten egg whites and roll in nuts. Bake at 375º for about 5 minutes on ungreased baking sheets. Remove from oven. Quickly indent each cookie center with thumb. Bake 8 minutes longer. Cool fill thumbprint with ½ candied cherry, bit of jelly, or chocolate. Makes about 2½ dozen cookies. |
Russian Tea Cakes
| Ingredients
1 cup butter ½ cup confectioners' sugar ¼ tsp. salt 2¼ cups flour 1 tsp. vanilla 3/4 cup finely chopped nuts |
Cream shortening; add sugar; cream again. Add salt and flour
to creamed mixture. Work in well with hands. Blend in vanilla and
nuts.
chill for an hour or so, then form into 1-inch balls. Place about 2½ inches apart on ungreased baking sheet. Bake at 350º for 10 to 12 minutes. These do not spread and should not brown. While warm, roll in confectioners' sugar. Let cool and roll again. |
Chocolate No-Bake Cookies
| Ingredients
2 cups sugar 4 Tbs. cocoa ½ cup milk 1Tbsp. butter 1 tsp. vanilla pinch of salt ½ cup peanut butter 2 cups oatmeal |
In a saucepan, combine sugar, cocoa, butter, milk, vanilla and
salt. Heat to boiling, stirring constantly. Boil for one minute.
Remove from stove and add peanut butter and oatmeal. Stir well. Drop by teaspoon onto waxed paper. Refrigerate until hard. Makes about 36 cookies. |
Chinese Almond Cakes
| Ingredients
1 cup flour
½ cup shortening ½ tsp. salt ¼ cup sugar ½ tsp. almond extract 1 egg yolk 1 Tbs. water ¼ cup blanched almonds |
Place flour in bowl. Cut in shortening. Use hands to work in
salt, sugar and flavoring.
Shape into long roll, 1-inch in diameter. Wrap in waxed paper and chill 1 hour. Cut roll into 1¼ inch slices and place 1 inch apart on greased cookie sheet. Brush with mixture of egg yolk and water. Press ½ almond into center of each. Bake at 400º for 8 to 10 minutes. |
