The dishes my husband prefers most!

Tabaka

(Russian Marinade)

Ingredients

3 oranges

1 lemon

2 limes

2 cloves garlic

1 inch fresh ginger

1 medium onion

2 cinnamon sticks

3 Tbs. paprika

1 tsp. sugar

¼ tsp. nutmeg

¼ cup white wine

3 Tbs. vegetable oil

salt & pepper, to taste

Remove zest of 1 orange and the lemon. Juice the oranges, lemon and limes and combine the juice and zest in a bowl.

Peel and mince garlic and ginger. Finely chop the onion, and add all to the juice mixture, along with cinnamon sticks, paprika, sugar, salt, pepper, nutmeg, white wine, and oil. Whisk to mix.

Makes enough marinade for 1½ lbs. chicken, game hens, or swordfish.

One of our favorites, and it smells so good when cooking!

Impossible Taco Pie

Ingredients

1 lb. ground beef

½ cup chopped onion

1 env. taco seasoning

1 4-oz. can green chiles

1¼ cups milk

3/4 cup Bisquick

3 eggs

2 tomatoes

1 cup shredded cheese

sour cream

Preheat oven to 400º

Cook ground beef until brown; drain.

Stir in taco mix and spread in pie plate. Top with green chiles.

Beat milk, eggs, and Bisquick until smooth. Pour over mixture in pie plate.

Bake 25 minutes; top with cheese and tomatoes and bake an additional 6 to 10 minutes.

Serve with sour cream.

Cottage Pie

Ingredients

1 Tbs. oil

1 onion, diced

1 carrot, chopped

1 clove garlic

1 lb. ground beef

3 Tbs. tomato paste

1 Tbs. horseradish

1 Tbs. each - parsley,
thyme, marjoram

1 cup beef stock

1 Tbs. cornstarch

Place oil in skillet. Add onion, carrots, and garlic and simmer til soft. Add ground beef and stir until browned.

Mix tomato paste, horseradish, spices and add to beef stock in medium saucepan. Add cornstarch and simmer til near boiling.

Pour beef mixture into casserole.  Pour liquid mixture over beef. Bake at 350º for 30 minutes.

Top with whipped potatoes and return to oven for 10 to 15 minutes, or until potatoes are browned.

Fish Bake

Ingredients

1 roll Ritz crackers

½ cup melted butter

fresh or canned crab meat

fresh or canned tiny shrimp

2 to 3 large slices fresh cod

Crush Ritz crackers and mix with melted butter. Sprinkle half the mixture in bottom of oblong baking dish.

Place sliced cod over crumbs. Top with crab meat and shrimp. Sprinkle remaining crumbs over top.

Bake at 350º for 30 minutes, or until fish is done.

Macaroni Au Gratin

Ingredients

1 8-oz. pkg. macaroni

¼ cup butter

¼ cup flour

2 cups milk

8 ozs. cheese, cubed

1 Tbs. chopped onion

½ tsp. Worcestershire sauce

½ tsp. salt

¼ tsp. pepper

¼ tsp. ground mustard

2 Tbs. Italian-seasoned
bread crumbs

Cook macaroni according to pkg. directions; drain. Place in a greased 2-qt. baking dish and set aside.

Melt butter in saucepan over medium heat. Stir in flour until well blended. Gradually add milk and bring to a boil. Cook and stir for 2 minutes; reduce heat.

Add cheese, onion, Worcestershire sauce, salt pepper and mustard; stir until cheese melts.

Pour over macaroni and mix well. Sprinkle with bread crumbs.

Bake, uncovered, at 375º for 30 minutes.

This is also good with fresh, chopped tomatoes stirred in before baking.
